
2021 Sauvignon Blanc
While vintage 2021 will be characterized by a lack of rainfall and, therefore, a dearth of fruit on California’s vines, the small amount of fruit that we were able to harvest abounds with flavor intensity.
The 2021 Keever Sauvignon Blanc offers bright, fresh aromas of honeydew, bergamot, lemon zest and fresh pineapple, all anchored with base notes of vanilla, lightly toasted oak and a hint of caramel. At entry, the texture is soft, round and full. Crisp green apple and lemon-citrus flavors add lift to the mid-palate while the toasted almond and oak tones provide structure to the finish. The palate finishes with mineral and citrus flavors.
The grapes for this wine were harvested on August 16 and 27, 2021. The grapes were gently pressed and transferred to a combination of French oak and stainless steel barrels for fermentation, then kept sur lie with weekly batonnage until late December 2021. The wine was bottled in mid-January 2022. 230 cases produced.
Due to the (sadly) small 2021 Sauv Blanc harvest, there is a 6 bottle limit per order.
